The other day, I had the hugest craving for cookies. What else is new? However, with the oppressive heat making my apartment into a sweat box, the last thing I wanted to do was turn on my oven.
That is where no-bake cookies came to the rescue. All you need is ten minutes and five measly ingredients everybody has on hand. Since I’m a huge lover of peanut butter and chocolate, this recipe is for Peanut Butter Oatmeal Chocolate Chip Cookies. You can either use chocolate chips or chop up a dark chocolate bar. I prefer the later.
When you’re done mixing the dough, you heap tablespoons on to wax paper and stick it in the freezer. Now whenever a cookie craving strikes, you won’t be left out in the cold. Enjoy!
3 cups old fashion oatmeal
5 tablespoons peanut butter
2 teaspoons vanilla
1 1/4 cups brown sugar
½ cup milk
¼ cup unsalted butter
Mix together the first three ingredients. Set aside.
In a saucepan over medium heat, whisk together brown sugar, milk and unsalted butter. Let the mixture come to a full boil for 1 minute.
Pour over oatmeal mixture and stir rapidly but thoroughly.
Spoon tablespoon size scoops on to wax paper and let set until firm.
