I have been on a Popsicle-making kick this summer. There are so many variations out there that my ADD brain doesn’t get bored. Essentially, Popsicles are frozen smoothies with fruit and some variation of liquid.
I don’t like mine super sweet so I use honey instead of sugar. However, feel free to adjust to your taste. These Blueberry Lime Ice Pops are incredibly refreshing on a hot day. They will cool you down while offering an explosion of deliciousness, and they’re vegan friendly, dairy free and refined sugar free! Boom!

3 cups fresh or frozen blueberries (not thawed), preferably wild (about 1 lb)
1/3 cup honey, or to taste
1/2 cup water
1/3 cup fresh lime juice
Special equipment: 8 to 12 ice pop molds and sticks
Simmer blueberries, honey, and water in a 1 1/2- to 2-quart heavy saucepan, stirring occasionally, until blueberries burst and collapse, 3 to 5 minutes. Wait to cool then purée with lime juice in a blender until smooth. Pour into molds and freeze until slushy, about 45 minutes. Insert sticks and continue to freeze until completely hardened, at least 3 hours and up to 1 week.
