When you think of snacks, you don’t usually picture an apple and bottle of water. What comes to my mind is greasy potato chips, cookies and those bars that masquerade as healthy but have 30 billion grams of sugar.
There is an ongoing debate about whether or not eating between meals is healthy. Let me tell you something, if you are eating the junk I mentioned above, it’s not. You’re also in for one hell of a sugar crash come 2 p.m.
I’m not the kind of person who is satisfied with three square meals a day. So what can you do to keep your stomach happy and your waistline trim? Make your own personal munchies. These Lemon Cashew Power Balls take five minutes to whip up and taste like lemon cream pie. They are filled with healthy fats without any processed sugar to boot. Whenever hunger strikes, reach for a power ball and feel your hunger dissipate.
2 cups raw cashews
1 cup chopped pitted baking dates
1 tablespoon coconut oil
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 tablespoon lemon zest, finely grated
pinch of salt
1 tablespoon fresh lemon juice
In a food processor, grind the cashews until they are a coarse texture. Add the dates and process until the mixture is well combined.
Mix in the coconut oil, maple syrup, vanilla extract, lemon zest, salt and lemon juice. Process until everything is combined and uniform in texture.
Form the mixture into balls by the heaping tablespoonful and place them into an airtight container. For best results, store in the refrigerator.
