Here’s an easy and delicious way to eat a slice of toast: While your bread is toasting, smash up an avocado (maybe with a splash of lemon or lime juice). While the toast is still steaming, drizzle olive oil on top, smear with a generous spoon of avocado, then top with salt and pepper. Can you taste it?
I have been eating this snack, err meal, for breakfast, lunch and dinner lately – you know that something is good when there are no time constraints. Creamy, crunchy and filling. Enjoy.
- 4 slices of crusty bread
- Olive oil
- 1 avocado
- (Optional: splash of lemon or lime juice)
- Salt and pepper to taste
- 1. Toast bread the way you like it.
- 2. Cut avocado in half, and remove seed. Scoop green parts into a small bowl, then mash (adding a splash of lemon or lime juice, if desired).
- 3. Drizzle toast with olive oil, then top with avocado paste, salt and pepper. Eat warm.
