Another year came and went, can you believe it? Last year was an adventure, but I’m looking forward to a new chapter.
One of my goals for 2014 is to banish sugary breakfast cereals and eat healthier (so unique, I know). And while oatmeal is fine and dandy, it never keeps me full like eggs do. So, my 2014 breakfast plan? Quiche.
The recipe below is baked in a muffin tin to produce single servings that are ready to be eaten when you wake up. Also, they sneak some greens into to your diet. Can’t argue with that!
- 4 eggs
- 1/4 cup milk
- 1 cup grated Cheddar cheese
- 1 cup broccoli florets
- Salt and pepper to taste
- 1. In a medium bowl, whist together eggs and milk. Add Cheddar cheese, broccoli and a shake of salt and pepper.
- 2. Grease a non-stick muffin tin, then pour in quiche mixture.
- 3. Bake at 350º for 20 minutes. Serve immediately, or wrap and refrigerate until desired (will keep for up to one week).
