Gastro 101: Espresso Cinnamon Bun Cookies

On lazy weekend mornings I always wish for a gooey cinnamon roll to go with my coffee. The problem is, I don’t want to get out of my sweatpants to walk the measly half-block to the bakery. So, last Tuesday, I came up with another solution: Espresso Cinnamon Bun Cookies. They taste exactly like the real thing, but without the pesky yeast. And yes, on weekends you can totally have cookies for breakfast. That hangover you’re sporting practically demands it. The coffee glaze drizzled on top is like dunking your cookie in a strong cup of espresso. Let’s just say, my cravings for cinnamon rolls are met. Enjoy!
