I have been waiting all year for the weather to get cold enough to make this soup. Ladies and gentlemen, we have arrived. Sure, we live in a free country and I could have whipped this up anytime, but there’s nothing like coming home to potato leek soup after a frosty winter day, when you walk down the street and your toes are so cold that you’re certain at least one of them has nerve damage.
Besides tasting good, this soup requires very few ingredients, and is a nice boost to your immune system during the current cold season. Potatoes, for example, are filled with more potassium than bananas, and are a good source of vitamin C, even better than a tomato. In addition to that, leeks are also packed with fiber, folic acid and calcium. We’ll all be warm and healthy in no time.
