Gastro 101: Puréed garlic potatoes

I like mashed potatoes, and rich gravy just fine. But truly, apart from the holiday season, I haven’t given them a second thought since my first taste of garlic mashed potatoes. As if they weren’t already creamy and perfect enough on their own, the French version that I have become accustomed to adds a heap of your favorite cheese, and can be prepared as a main dish, served alongside lox, or smoked salmon, steamed asparagus or Brussels sprouts, and so on, or as a side dish next to everything else.
