Instead of giving you instructions for how to combine and reassemble your Thanksgiving leftovers, I thought it better to give you the best recipe in the world, or at least my favorite thing to eat for the time being. I call it “arroz con salmon,” and I accidentally created it when I tried to improvise a Colombian recipe that my husband’s mom made him as a kid with what I actually had in the refrigerator. Plus cumin. Plus dill. The result is a creamy, risotto-like rice dish that is mouthwatering down to the last bite.
